Let’s face it, things are not looking so hot on the food front.
I’ve written about many of the reasons why ad nauseum, so if you’re interested in more background on it, just check out the social commentary and prepping tags.
But in the meantime, we really are just one minor disruption away from having little to no access to the groceries we are used to, at a minimum.
So we should be ready to live an emergency food-eating lifestyle for a while, at any given moment.
I’ve also written much about the kinds of foods and meals you can make from an emergency stockpile using simple ingredients you can easily pick up at your local grocery store, including many that might be on your lists already.
Just because you’re living in an apocalyptic wasteland doesn’t mean you can’t enjoy yourself!
While in the worst case scenarios you might have to strip things down to basics, especially if you’re without power, there is still a simple way to get the lightness and brightness of a salad even though you don’t have fresh lettuce.
We’ll call it apocalypse salad and it starts with your reliable can of green beans.
This is something I used to eat a lot of while growing up and it is still as delicious as it gets today.
And it couldn’t be simpler. Or cheaper!
Simply drain a can of french cut green beans, add a little salt and pepper, then dress with the vinegar and oil of your choice (simple white vinegar and olive oil will do just fine). And voila! You have an emergency food stockpile salad.
Apocalypse salad.
While the time is now to prepare your household with the food you will need in an emergency situation, the time is also now to make sure you create enough variety to keep everyone happy.
As happy as you can be in an apocalypse, of course.
